🍋 Lemon Ricotta Cake 🍋 This is one of my favorite keto treats to make! It isn’t overly sweet and works as both a breakfast cake with a good cup of coffee/tea or as a dessert! When I have it for dessert I usually top it with a little dollop of freshly whipped cream and some fresh berries too! For those of you that don’t like lemon desserts, no worries! You can make this a vanilla cake instead! Omit the lemon juice and the zest. Add in 2 ADDITIONAL tsp of vanilla extract.

A delicious sugar-free cake with a light lemon zest. It isn’t overly sweet and works as both a breakfast cake with a good cup of coffee/tea or as a dessert!

Ingredients

  • 2 eggs
  • 1 egg yolk
  • 1 Cup erythritol or monkfruit
  • 1/4 Cup lemon juice
  • 2 Tbsp lemon zest
  • 1 Cup ricotta, drained
  • 2 Cups almond flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp xanthan gum
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 Cup powdered erythritol or powdered monkfruit (optional to dust)

Instructions

  1. Peheat the oven to 350F. Grease a 9 inch cake pan and set aside.
  2. In a large bowl beat the eggs and yolk with the erythritol, vanilla extract, lemon juice, and lemon zest on high with a hand/stand mixer for about 1-2 min (or mix by hand with a whisk). Then fold in the ricotta by hand.
  3. In a separate bowl mix together the dry ingredients.
  4. Slowly combine the dry and wet ingredients a little at a time. Pour into the greased pan. Bake for 30-40 mins until golden. Allow to cool then dust with optional powdered sweetener.
